Kitchen Sink Frittata

Eggs and Leftovers to the rescue

Ingredients

  • 1 tbsp butter
  • 4 eggs
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 2 tbsp pasta sauce
  • 1/2 cup veggies Mushrooms, bell peppers, onions, etc
  • 1/4 cup mozzarella cheese

Instructions

  • Whisk eggs, salt and pepper until fully combined and no white streaks are left
  • Heat nonstick pan on medium, add butter until sizzling
  • Preheat broiler
  • Add eggs to pan
  • Add cheese and veggies and spread until even
  • You can use frozen veggies, just thaw a bit so they don't slow down cooking time
  • When nearly set but a bit runny on the top, move under broiler. Broil for roughly 3-5 minutes, but keep an eye on it and remove when starting to brown on the top
  • Grate parmesan, slice like a pizza and serve
